and here are a few great Sugar Busters recipes.

Sugar Busters Chicken Enchilada

INGREDIENTS

DIRECTIONS

  • 2 packs Whole Wheat Tortillas
  • 1 fully cooked chicken (deboned)
  • 1 bunch Green Onions
  • 1/4 cup Jalapenos chopped (mild)
  • 1 1/2 tbs. Cummin
  • 1 tsp. cayenne
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 2 lbs. fresh Roma Tomatoes (chopped)
  • 1 stick Butter (or margerine)
  • 1 cup Cheddar grated
Cook in pot butter, tomatoes, shallots, Jalapenos until tomatoes are soft.

Add chicken, rest of spices, and 1/2 cup shredded cheddar.

Scoop about one tbs of mixture in tortilla and fold.

Top servings with more sauce, shredded cheddar, top green onion, and Jalapenos

Sugar Busters Stuffed Eggplant

INGREDIENTS

DIRECTIONS

  • 3 large Eggplants (cubed)
  • 2lbs Roma Tomatoes (diced)
  • 1 Onion diced
  • 1 tsp Garlic
  • 1/2 stick Butter
  • Italian cheese (grated)
  • 1/4 cup Bread Crumbs(sugar busters)
  • 1 Egg

Melt butter, add seasoning.

Cook until tender.

Add eggplant and tomatoes.

Cook until eggplant is soft.

Remove heat.

Add egg, bread crumbs, cheese.

Optional: Season with ham, bacon, or shrimp

Sugar Busters Shrimp Pasta

INGREDIENTS

DIRECTIONS

  • 1 cup Season Mix (chopped produce)
  • 1 lb bag Frozen Shrimp
  • 1 quart Half & Half
  • 1tsp Tony's seasoning
  • 1lb whole wheat Pasta (Angel Hair)
  • 1 stick Butter
  • 1 tbs Paprika

Fry seasoning in butter.

Add shrimp, Tony's, paprika.

Cook on simmer 5 minutes.

Add half & half.

Thicken with whole wheat flour.

Serve on whole wheat thin spaghetti.

Sugar Busters Stuffed Bell Peppers

INGREDIENTS

DIRECTIONS

  • 3 Bell Peppers cut 1/2s
  • 2 lbs Ground Chuck
  • 1 cup Seasoning Blend
  • 1/2 cup sugar busters Bread Crumbs
  • 1 Egg
  • 1/4 cup grated Italian cheese
  • Tony's creole seasoning to taste
  • 1 tsp Garlic powder
  • 1/2 stick Butter
Fry ground chuck in butter.

Add seasoning.

Cook until brown- remove heat.

Add egg, bread crumbs, cheese.

Stuff in blanched(par-boiled) peppers.

Optional:

    *season with ham, bacon, or shrimp

    * top with  red sauce or cheese.

Sugar Busters Chicken Cacciatore

INGREDIENTS

DIRECTIONS

  • 1 can Contadina Italian Style sauce
  • 1 Chicken fully cooked (deboned)
  • 1 large Red Onion (chunked)
  • 1 Green Pepper (chunked)
  • 1/2 stick Butter
  • 1 tbs Olive Oil
  • 1 tsp chopped Garlic
  • 1 lb fresh Roma Tomatoes (chunked)
  • black pepper, white pepper, Tony's Italian seasoning to taste
Melt butter and olive oil.

Add onion, pepper, tomatoes, garlic.

Cook down.

Add chicken.

Add tomato sauce and 1 can water.

Add pepper and Tony's.

Bring to boil.

Serve on top of whole wheat pasta.

Suggested: Penne pasta

Sugar Busters Creamed Spinach

INGREDIENTS

DIRECTIONS

  • 3 packs frozen Spinach
  • 1 pack 8oz Cream Cheese
  • 1 bunch Green Onions(shallots)
  • 8 slices American cheese
  • 2 tbs Butter
  • 1 pint Half & Half
Cook spinach drain-set aside.

Fry shallots in butter.

Add cheese, half & half, spinach.

Sugar Busters Crawfish Etoufee

INGREDIENTS

DIRECTIONS

  • 2 lbs. Crawfish tails (cooked, peeled)
  • 2 qts Half and Half
  • 1 stick Butter
  • 2 cups Creole Seasoning Mix (choped onions, celery, garlic, green onions)
  • 1 tbs Tonys creole seasoning
  • 1 tsp Tobasco
  • 10 tbs Whole Wheat Flour
  • 1 tbs Garlic Powder
  • 1 1/2 tbs Salt
  • 4 boiling bags Minute Brown Rice.
Saute Creole Seasoning Mix in butter for approx. 5 minuites (until tender).

Add Half and Half, Tonys seasoning, salt, garlic powder and bring to a Boil. Slowly add wheat flour into mixture while stirring vigorously to avoid clumping.

While sauce is simmering, add crawfish (including any and all fat and juice in bags).

Serve over Brown Rice. Garnish with fresh Chives.

Sugar Busters Pasta & Meat Sauce

INGREDIENTS

DIRECTIONS

  • 4 lbs. Ground Chuck (or lean ground beef)
  • 3 jars Sal and Judy's Diet Red Sauce
  • 2 Green Peppers
  • 1 large Yellow Onion
  • 2 tsp Garlic Powder
  • 3 tsp Salt
  • 2 tsp Tony's
  • 2 tsp Italian Seasoning
  • 1 1/2 cups Red Wine
  • 3 tbs Butter
  • 3 Hodson Mills Wheat Thin Spaghetti
Boil pasta, drain, and put on side.

Cut the Green Peppers and Yellow Onions into large chunks and saute in butter until slighty soft.

Brown Ground Chuck, drain oil.

Combine three jars of sauce, ground chuck, vegetables and mix well.

Clean out jars with wine into mixture.

Bring to boil and let simmer for about 25 minutes. Yields 15 - 16oz portions.

Home Lasagna

INGREDIENTS

DIRECTIONS

Defrost spinach; squeeze all water out. Drain canned artichokes.

Melt butter in 2 quart sauce pan and add flour. Stir until well blended.

Add half & half, spinach, and artichokes. Stir until well blended.

Add Italian cheese, garlic, ricotta , and squeeze in fresh lemon juice.

Spray vegetable oil on 9" X 13" pan. Coat pan with a little spinach, artichoke mixture; Then arrange layer of noodles, more mixture, noodles, and mixture. Top with grated mozzarella cheese and sprinkle Italian seasoning over dish.

Cover pan with foil lightly sprayed with oil. Bake in pre-heated oven at 350 for 40 minutes. Let stand 20 minutes before cutting.

Makes 12 - 16 servings.
