Crabcakes & bacon on a sandwich? Yessssss!

Creamy, crunchy, & crabby, you’re going to love this BLT.

Check out this awesome Creole Crabcake BLT Sandwich recipe from our good friend, Megan Romer (@meganromer on twitter).

Creole Crab Cake BLT Sandwich

1 Tbsp. Creole mustard

1 large Egg

1/2 cup mayonnaise

1 sweet red pepper, de-seeded and minced

2 Tbsp. green onions, finely chopped

2 tsp. Tony Chachere’s

1/2 cup plus 1/4 cup panko breadcrumbs

1 lb. fresh crabmeat, drained and picked over

1/2 c. butter

1 package bacon

1 Creole tomato

Romaine or iceberg lettuce

Remoulade – (highly suggest Arnauld’s)

Pistolettes, or other small white bread rolls

Part 1: Make the world’s easiest and best bacon

  1. Spread bacon on a sheet pan
  1. Place sheet pan in the oven
  1. Turn oven on to heat it to 400 degrees (YES, after the bacon is already in the oven)
  1. Use the next 17-20 minutes to prepare the crab cakes, IGNORING THE BACON until minute 17 or so, when you should check to make sure it’s not burning.
  1. After 17-20 minutes, remove bacon from oven and remove from pan to drain on paper towels.

Part 2: Make the crab cakes

  1. Mix mustard, egg, and mayo well.
  1. Stir in red pepper, onions, and Tony’s.
  1. VERY gently, fold 1/2 cup breadcrumbs and crab meat into the mixture. Try not to break up the meat too much, keeping some nice chunks intact.
  1. Form mixture into patty-shaped cakes (thinner and wider is good, as these are for sandwiches).
  1. Put 1/4 cup breadcrumbs into bowl.
  1. Dredge each cake in the breadcrumbs.
  1. Bring butter to a sizzle over low-medium heat in a pan.
  1. Cook cakes in butter, about 5 minutes on each side, until golden brown.
  1. Let cakes sit on paper towel while assembling sandwiches

Part 3: Assemble Sammies

Smear bread with remoulade (or condiment of your choice), add bacon, lettuce, tomato slices, and crab cakes.
