In the spirit of the the season, we’ve decided to share our top-secret recipe, utilizing those New Orleans’ holiday staples, the Mirliton Squash.

BREAUX MART’S SHRIMP MIRLITON RECIPE

INGREDIENTS

10 Mirliton Squash

2 pounds shrimp

3 caps Zatarains crab boil

1/2 cup butter

1 onion (chopped) – for creole seasoning

1 cup celery (chopped) – for creole seasoning

2 tablespoons fresh, minced garlic – for creole seasoning

1 tablespoon of seafood base

6 dashes of Tabasco

1.5 tablespoons of Tony Chachere’s seasoning

1.5 pounds Italian Bread Crumbs (plus a few dashes more for sprinkling on top)

2 eggs

 

METHOD

Place mirliton in a large pot, covered with water. Bring to a boil. Cook for approximately 45-50 minutes, until tender. Remove from heat, drain, & cool. Peel and seed merlitons. Cut into 1-inch cubes, set aside.

Place shrimp in large pot, and cover with water. Add crab boil. Cook over high heat until the shrimp turn pink (10 minutes or so). Take off heat and allow shrimp to steep in crab boil while preparing next step.

In a clean, heavy pot/pan, melt butter. Add minced garlic, onions, & celery (creole seasoning). Cook until onions are transparent. Add seafood base, mix well.

In large container/bowl, combine cubed mirliton and cooked creole seasoning. Drain shrimp and add. Mix well.

Add breadcrumbs, folding mixture over gently a few times to combine ingredients, do not over mix.

Add Tabasco, mix.

Add eggs, mix.

Add Tony’s seasoning, mix.

Spoon mixture into large baking dish or aluminum casserole pan.

Sprinkle remaining bread crumbs on top.

Bake at 350 degrees, for 30 minutes.
